Ingredients:
2 tbsp. ghee
1 medium yellow onion, chopped
2 garlic cloves, minced
1 bay leaf
1 tbsp. cayenne pepper
1 tbsp. ground coriander
1 tbsp. ground cumin
1 tsp. ground turmeric
Salt and freshly ground black pepper to taste
2¼ cups dry cannellini beans
1 (28-ounce) can whole peeled plum tomatoes
1 (6-ounce) can tomato paste
2 cups vegetable broth
Directions:
Place the ghee in the Instant Pot and select “Sauté.” Then add the onions and garlic and cook for 4-5 minutes.
Select “Cancel” and stir in remaining ingredients.
Secure the lid and turn the pressure valve to the “Seal” position.
Select “Manual” and cook under “High Pressure” for about 35 minutes.
Select “Cancel” and carefully do a “Natural” release.
Remove the lid and stir the mixture well, breaking up the tomatoes.
Serve hot.
